Belgian Sweet-and-Sour Cucumbers with Chives

Cucumber with Chives

I love the tart-sweet combination of crunchy veggies marinated in cider vinegar with a little sugar. Cucumbers and onions are such a great combo of texture and flavor and both can stand in the fridge for hours just getting better and better until you’re ready to eat them. The addition of fersh chopped chives (or parsley, or even mint) gives the salad a nice herbaceous note that balances the flavors well. Serve with any heavier fare for a nice contrast!

Sweet and Sour Cucumbers with Chives

Serves 4

1 long English cucumber or 2-4 Persian cucumbers
½ medium red onion, cut into paper thin slices
1 cup apple cider vinegar
1 ½ Tbsp sugar
1 tsp salt
Freshly ground black pepper to taste
1 Tbsp finely minced fresh chives

1. Combine all the ingredients in a nonreactive mixing bowl.

2. Cover and refrigerate for 1-2 hours before serving.
