Sweet and Sour German Green Beans

Bacon, vinegar, and mustard give this vegetable side dish a nice little punch. If you are looking to make it vegetarian, the dressing is great even without the bacon, just start by cooking the onion and continue on.

Sweet and Sour German Green Beans with Bacon and Onions

Adapted from Low Carb Maven

1 pound green beans, washed and ends trimmed
4 slices bacon, chopped
¼  cup onion, finely chopped
2 Tsbp apple cider vinegar
2 Tbsp water
1 Tbsp brown sugar
¼  tsp salt
1 tsp whole grain mustard

1. Steam green beans for 5-7 minutes or until tender.

2. In the meantime, put the chopped bacon in a medium-large pan over medium heat. Let the bacon cook for 4 minutes until almost crispy. Add the onions and sauté until they begin to soften.

3. Add the cider vinegar, water and brown sugar to the bacon and onions and stir. Reduce slightly. Add the whole grain mustard into the pan.

4. Lastly, add the steamed green beans and stir to coat and re-heat through as needed.

5. Season to taste with salt and pepper.
