Tuscan GP 2020: Fagioli all'uccelleto (Tuscan Beans in Tomato Sauce)

Another crazy Italian race! All the drivers were excited to be racing at Mugello and experience a new track. What was unexpected was the mayhem not only at the start, but the restart. Two red flags, is practically unheard of, and you would think that with so much drama we’d have a slightly more interesting podium, but Mercedes held their own and stayed at the top. Congrats though to Alex Albon for his first podium. I hope this gives him a boost of confidence and we see him racing his teammate at the front!

For this race weekend I went for simple and rustic with a Tuscan flatbread known as Schiacciata and Fagioli all’uccelletto (Beans in tomato sauce). Served up with a quick and delicious Caprese salad.

Tuscan Meal

Fagioli all’uccelletto (Beans in tomato sauce)

Adapted from Inside the Rustic Kitchen

Serves 4 as a side, 2-3 as a main

1/2 tbsp olive oil
2 garlic cloves
6-7 sage leaves
1 -  14oz can cannellini beans
14 oz pureed tomatoes, canned or fresh
2/3 cups water (optional especially if using fresh tomatoes)
Salt and pepper to season

1.Add the olive oil to a saucepan. Crush the garlic cloves with the back of a knife and add to the pan with the sage.

2. Fry for one minute then add the pureed tomatoes. Add a pinch of salt and pepper and let it simmer for 10 minutes.

3. Add as much water as you wish to thin the sauce out, up to 2/3 cup.

4. Add the beans and let cook down for another 5 minutes.

5. Add more salt if needed and serve.
