Australia: Vegemite Snacky Nuts

This year I am aiming to find all the best snacks from around the world.

“Best” can mean any number of things — crunchiest, most fun to eat with your hands while watching fast cars go in circles, easiest to throw together, quickest to make, most likely to have all the ingredients for, sweetest, savoriest, most promising to win the office potluck party honorable mention.

So far, I have found crunchy, had all the ingredients, and easy to make… I present you: Vegemite Snacky Nuts

Snacky Nuts

Vegemite Snacky Nuts

3 cups mixed raw nuts (almonds, cashews, walnuts, or macadamia nuts - any or mix of all)
1 tablespoon Vegemite
1 tablespoon honey
2 teaspoons toasted sesame oil
2 teaspoons water
1 teaspoon ground cumin
½ teaspoon paprika
¼ teaspoon chili powder

  1. Preheat oven to 350°F (180°C).

  2. Spread the raw nuts on a large parchment-lined baking sheet. Bake for 10–15 minutes, or until lightly golden brown (if you want to use pre-roasted nuts, skip this step).

  3. In a large bowl, combine the Vegemite, honey, sesame oil, water, cumin, paprika, and chili powder, stir to combine.

  4. Add the warm nuts to the bowl and stir until evenly coated.

  5. Return the nuts to the baking sheet and bake for another 3–5 minutes, or until the coating is dry to the touch. Be careful not to overbake, or it will become bitter.

  6. Remove from the oven and let the nuts cool completely on the tray before serving.
